A friend is having a contest for the best adaption of Mac& Cheese. I can’t make it to the party but my idea was to make Kugel – a sweet, cheesecake like noodle dish. I add fresh and dried fruit to mine, but here is the basic dealie.
4 cups uncooked egg noodles
1/4 cup butter or margarine, melted
2 cups small curd cottage cheese
2 cups sour cream
2 cups milk
1 (8 ounce) package cream cheese, softened
1 1/4 cups sugar, divided
1 teaspoon vanilla extract
1/8 teaspoon salt
1 tablespoon ground cinnamon
Cook noodles according to package directions; drain. Toss with butter; set aside. in a large mixing bowl, beat the eggs for 8-10 minutes. Beat in cottage cheese, sour cream, milk, cream cheese, 1 cup sugar, vanilla and salt. Stir in noodles. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Combine the cinnamon and remaining sugar; sprinkle over noodle mixture. Bake, uncovered, at 350 degrees F for 55-60 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before serving.
